    Chorizo Pasta Bake - March 2015 Cook Along

    This is a really tasty meal and can be served on its own or with a fresh salad.  If you have Passata in the freezer, this makes a very quick and easy meal.

    Chorizo Pasta Bake – March 2015 Cook Along

    Ingredients

    • 100g parmesan cheese, cubed
    • 200g mozzarella cheese, cubed
    • 350g spiral pasta
    • 250g chorizo, thinly sliced by hand
    • 600g ThermoFun Passata
    • 200g mushrooms, sliced by hand
    • 60g baby spinach

    Instructions

    1. Place mozzarella cheese into TM bowl and grate 4 sec / speed 4. Set aside.
    2. Place parmesan cheese into TM bowl and grate 10 sec / speed 9. Set aside.
    3. Make ThermoFun Passata. Set aside.
    4. Cook pasta in your ThermoServer Click Here for directions.
    5. While pasta is cooking, continue on with recipe.
    6. Place chorizo into TM bowl and cook 10 mins / Varoma / speed 1 / Reverse.
    7. Pre heat oven to 180°C.
    8. Once pasta is cooked, drain and then place in a large rectangle casserole dish.
    9. Add passata, mushrooms, baby spinach and parmesan cheese to the pasta and stir to combine.
    10. Place a couple of sheets of paper towel into a colander and drain the chorizo.
    11. Add half the chorizo to the pasta and stir to combine.
    12. Top pasta mixture with mozzarella cheese. Arrange remaining half of chorizo slices over top of the cheese.
    13. Bake for 15 mins.

    Notes

    • The time needed in the oven depends on the temperature of your Passata. • Leftovers freeze very well.

      Simple and yummy. Yesterday I cooked too much pasta and it didn't go to waste, I used it with this sauce and the kids gave thumbs up!
