
Okay so I might have missed the boat as some say - but this is the first time I have cooked Pork Belly EVER! :)
Thank you to a wonderful friend for sharing her Pork Belly recipe - that has been in her family for years! I don't think I will need to try any other recipes as the happy mouths at the table were testament to keeping this one on the dinner rotation!
Ingredients
- 1kg pork belly, rindless, cut into large thumb sized slices
- 1 red chilli, deseeded
- 2 garlic cloves, peeled
- 1 lemongrass stem, quartered
- 40g brown sugar
- 40g honey
- 50g dark soy sauce (or dark mushroom flavoured soy sauce)
- 40g water
- 40g Chinese Cooking wine
- 1 teaspoon five spice, ground
- 1 teaspoon sesame oil
To Serve:
- 400g basmati rice
- 900g boiling water from kettle
- Bok Choy or other green vegetables
- 2 spring onions, sliced into rings
Instructions
- Preheat oven to 170°C.
- Place pork pieces into a large casserole or baking dish.
- Place chilli, garlic and lemon grass in TM bowl and chop 5 sec / speed 8.
- Add remaining ingredients (except 'to serve' ingredients) and combine 10 sec / speed 5.
- Pour sauce over pork and combine.
No need to wash TM bowl. - Cover the dish with lid/foil and bake in oven 40 mins.
- Remove pork from oven and remove lid/foil. Stir pork pieces through sauce and return to oven without covering. Bake a further 20 mins until sauce has reduced and thickened a little.
- While pork is in oven for the last 20 mins, pour boiling water in TM bowl. Place rice in simmering basket and rinse under cold tap until water runs clear. Carefully insert basket in TM bowl and cook 8 mins / Varoma / speed 4.
- While rice is cooking, place vegetables of your choice in Varoma. After 8 mins place assembled Varoma on top of TM lid and cook rice and veg 8 mins / Varoma / speed 4.
- Serve pork with rice, vegetables and garnish with spring onions.

Very tasty! Adapted for Trim Healthy Mama/LCHF by replacing sugar and honey with 10g of stevia/erythritol blend. Cooked in Instant Pot for 7 minutes, natural release.

Very easy tasty recipe enjoyed by family on multiple occasions. We used lemongrass crushed in the tube of 1 tablespoon in the recipe once when we couldn't get the fresh stick. Still tasted great and no stringy bits.
