This is what happens when you leave your husband in charge of dinner! A whole new recipe is born! Thermomix Beef Strogalash! The story goes ...... as told by Steve.
"So I was left in charge of dinner when my Thermo-spouse went off to a thermomix consultants meeting. Look in the freezer, found some "beef stroganoff" beef already sliced up, mushrooms in the fridge. Easy Peasy!
Look up Beef Stroganoff in the EDC index, page 98.
Chop the garlic and onion, add oil, saute, add meat, cook 5 minutes. Add sugar, tomato concentrate, fresh tomatoes, wine, spices - read down the list of spices, yep got all that. That's strange, when do I add the mushrooms?
Uh-Oh, look at top of page - I am cooking Hungarian Goulash!!! (page 99 - Beef stroganoff is on the facing page!). Doh! and it's going to take an hour and I wanted to use up the mushrooms.
No problem, switch to the Beef Stroganoff recipe. White wine/red wine, whatever!! Add the mushrooms and all the other ingredients starting with the vege stock.
THERMOMIX BEEF STROGALASH is born. Ta Da !!

If you follow a low carb/keto way of eating, it is absolutely delicious served on a bed of cauliflower mash that was given to ThermoFun members in 2016 or can be found in the 2016 e-cookbook.
Ingredients
- 2 garlic cloves, peeled
- 2 onions, peeled and halved
- 20g butter
- 800g beef, sliced into strips
- 250g mushrooms, sliced
- 1 teaspoon sugar
- 50g ThermoFun Tomato Paste
- 250g tomatoes, fresh, diced
- 150g red wine
- 2 tablespoon paprika, sweet
- 20g TM vegetable stock concentrate
- 1 tablespoon cornflour
- 1 teaspoon Dijon mustard
- 120g sour cream
- 1 teaspoon salt
To serve:
- cooked pasta, potato garlic mash or cauliflower mash
- fresh coriander or parsley
Instructions
- Place garlic, onion and butter into TM bowl and chop 3 sec / speed 5.
- Scrape down and sauté 5 mins / Varoma / speed 1 / MC off.
- Add remaining ingredients and combine with aid of spatula, except parsley and cook 25 mins / 90°C / speed 1 / Reverse.
- Serve with pasta/mashed potato and garnish with parsley/coriander.

One of my favourites, though we usually use diced pork. My hubby is Hungarian/Yugoslav by heritage and they use pork, rather than beef in their goulash. My family won't eat mushrooms if they can see them so I just blitz them with the onion & garlic and everyone is happy .

This is an amazing fusion of two really tasty recipes - Steve is a genius!
You can make this totally vegetarian - use 700 gm of mushrooms but you will need to add them progressively as they cook down. New favourite and on permanent rotation...
