As winter fast approaches the old winter warmers are starting to creep back into the kitchen! This thermomix apple and caramelised walnut cake will be the top of the winter warmer list! The spices, the apple and walnuts provide enough comfort for those cold nights when you're curled up wanting something warm in your tummy. :)
A slice of this apple and caramelised walnut cake will be perfect when you're watching Masterchef too - because we all know that Nigella Lawson's Cake episode had us all salivating for a piece of each cake!
This is a delicious cake served warm for dessert or cool for afternoon tea. Don't skimp on the special whipped cream, it's a real treat!
Ingredients
Ingredients Cake
- 5 golden delicious or Granny Smith apples
- 1 lemon, zest and juice
- 4 eggs
- 170g caster sugar
- 210g plain flour
- 1 teaspoon baking powder
- 2 teaspoon cinnamon, ground
- ¼ teaspoon salt
- 125g butter, cubed, softened
Ingredients Walnut Topping
- 60g butter, cubed, softened
- 80g dark brown sugar
- ½ teaspoon cinnamon, ground
- 125g crumbed walnuts
Ingredients Whipped Cream
- 600ml thickened cream
- 60g dark brown sugar
- ½ teaspoon ThermoFun Vanilla Bean Paste
Instructions
- Preheat oven to 180°C. Line base and sides of a 23cm springform tin with baking paper.
- Peel and core apples and slice very thinly. Place into a large bowl and coat with lemon juice and zest.
Method Walnut Topping
- Place butter, dark brown sugar and cinnamon into TM bowl and mix 10 sec / speed 4.
- Add walnuts and mix through with aid of spatula and spread evenly into tin.
Method Cake
- Place eggs and sugar into TM bowl and mix 20 sec / speed 4.
- Add flour, baking powder, cinnamon, salt and butter and combine 10 sec / speed 4. Scrape down and repeat.
- Tip mixture in with sliced apples and with aid of spatula gently mix until just combined. Pour on top of walnut topping and smooth evenly.
- Bake 45-50 mins or until skewer comes out clean. Allow to cool a little before releasing just the sides of the cake tin. Place a serving plate on top of cake and flip it over. Carefully remove base of cake tin to reveal the caramelised walnut topping.
Method Whipped Cream
- Insert butterfly. Place all ingredients into TM bowl and whip approx. 15-30 sec / speed 4 OR until soft peaks form.
- Serve apple cake with a generous dollop of whipped cream.

Made this today and hubby has declared it the best apple cake you could hope to eat. I didn't do the whipped cream, just served it warm. I didn't use a packet of crumbled walnuts, but used the TMX to roughly chop whole walnuts before starting everything else. Delicious recipe - thank you!
