This is a very similar dip to one I’ve already ‘winged’ before by copying the ingredients off a commercial dip container! However this has more sweet chilli sauce and also has lemongrass in it, which I really enjoy in Thai food. This thermomix Thai Chilli Lemongrass Coriander and Cashew Dip is delicious made with my Thai Spice Blend.
This dip has so much flavour you will be hovering over the bowl! I’ve made this quite a few times and it really is the first to be cleaned out and I’ve even heard someone ask the host – oh have you got the container for that dip I want to get some for home!!
It still never ceases to amaze me how we can just throw everything in the Thermomix and in literally 2 seconds we have a sensational dip! ☺

- 1 red capsicum (120g approx.) quartered
- 120g cashews, unsalted
- 20g olive oil
- 5g fresh coriander (a generous handful)
- 25g sweet chilli sauce
- 1 garlic clove, peeled
- 1 red chilli, deseeded
- lemongrass (approx. 10cm – sliced into rings)
- 5g lime juice
- 5g lemon juice
- 1 tsp ThermoFun Thai Spice Blend
- Place all ingredients in TM bowl and chop 1 sec / Turbo.
- Scrape down and repeat to desired consistency.
