
If you need a quick 'throw it all on a plate' and watch the masses demolish it, then this thermomix zucchini and feta fritters served with tzatziki is perfect!
Serving Size
approx. 20 fritters
Ingredients
- 500g zucchini (approx. 3 medium), quartered
- 1 garlic clove, peeled
- 3 spring onions, quartered
- 200g Greek feta cheese, crumbled
- 2 eggs
- 30g pine nuts
- 80g plain flour
- 1 tablespoon fresh dill, chopped
- ½ teaspoon oregano, dried
- salt and pepper, to taste
- To serve, ThermoFun Tzatziki
Instructions
- Place zucchini into TM bowl and chop 3 sec / speed 5.
- Place zucchini into simmering basket over sink/bowl and squeeze out as much liquid as possible (use spatula / hands / paper towel as required). Allow zucchini to keep draining in basket.
- Place garlic and spring onions into TM bowl and chop 3 sec / speed 8. Scrape down.
- Add all remaining ingredients, including zucchini and mix 10 sec / speed 3 / Reverse.
- NB: if batter is too wet, add a little more flour.
- Shape, pan-fry and serve hot with Tzatziki.
