Now I know most of you won't believe me when I say that I enjoy a healthy smoothie! So every now and again I have to remind you! This Thermomix blueberry coconut smoothie is just so refreshing and so very very filling. Perfect for breakfast or a morning or afternoon snack, and even easy to take wherever you go. It's also perfect for the kids crying that they're hungry when they get home from school. Quick and easy to make and will keep them quiet in no time.
Smoothies were always my 'go to' when my kids were younger - I couldn't cook remember! Now Diana has them almost daily. She would literally live on smoothies when it was exam cram time, which I didn't mind because I knew they were good fats and good brain power for her!
Ingredients
- 40g raw almonds
- 100g coconut milk (not cream)
- 100g natural yoghurt
- 150g frozen blueberries
- 20g maple syrup (leave out if preferring a low carb option)
- 120g ice
- 80g water
Instructions
- Place almonds into TM bowl and mill 15 sec / speed 9.
- Scrape down and mill a further 10 sec / speed 9.
- Add remaining ingredients and blend 1 min / speed 9.
