I've always been keen to find a really good seafood chowder recipe! So with the help of Google and combining about 3 recipes and making it a few times this is it! :)
Ingredients
- 1 onion, peeled and halved
- 3 rashers short cut bacon, quartered
- 1 carrot, chopped into chunks
- 500g potato, peeled and chopped into chunks
- 500g boiling water from kettle
- 20g TM vegetable stock concentrate
- 1 bay leaf
- 1 teaspoon dried dill
- 1 teaspoon thyme
- black pepper
- 2 corn cobs, kernels cut off
- 500g marinara
- 160g thickened cream
Instructions
- Place onion and bacon into TM bowl and chop 3 sec / speed 5.
- Add carrot, potato, water, stock, bay leaf, dill, thyme and pepper and cook 20 mins / 100°C / speed 1.
WARNING: WHEN PUREEING HOT LIQUIDS FOLLOW THE DIRECTIONS IN YOUR THERMOMIX INSTRUCTIONS MANUAL. - Carefully blend 1 min / gradually increasing from speed 1 to speed 9.
- Add corn kernels. Cook 10 mins / 100°C / speed 1 / Reverse.
- Add marinara and cream, stir through with aid of spatula and cook 3 mins / 100°C / speed 1 / Reverse.
- To serve, ladle the chowder into serving bowls.

We really enjoyed this chowder and have made it a couple times already. With some warm crusty bread, it's a quick easy meal.
