    ThermoFun - Flourless & Butterless Orange Cake Recipe

    This Orange Cake recipe was inspired by our beautiful friends Glenn & Emer, whom we have known for over 25 years!

    My husband and I were very fortunate to have had a holiday in France in October 2013.  While we were staying with Glenn & Emer in Dijon, Emer made us this amazing cake – I immediately said to her I need this recipe to take home as I’m sure I could just whip it up in my Thermomix in about 30 seconds!  Thank you Emer!  We think of you guys every time I make this with very fond memories of our week with you all in Dijon!  It just goes to show that Dijon is not only known for yummy mustard!  :)

    ThermoFun – Flourless & Butterless Orange Cake Recipe

    Ingredients

    Cake

    • 200g raw sugar
    • 300g almonds
    • 2 oranges washed, unpeeled, quartered
    • 3 eggs
    • 1 teaspoon gluten-free baking powder

    Orange Syrup (optional)

    • 30g raw sugar
    • 1 orange, juice only

    Instructions

    Cake

    1. Preheat oven to 170°C. Grease and line a round cake tin.
    2. Place sugar into TM bowl and mill 3 sec / speed 9. Set aside.
    3. Place almonds into TM bowl and mill 15 sec / speed 9. Set aside.
    4. Place oranges (leaving skin ON) into TM bowl and chop 10 sec / speed 8.
    5. Add eggs, sugar, almond meal and baking powder and mix 20 sec / speed 4.
    6. Pour into cake tin and bake 60 mins or until a skewer inserted into the centre comes out clean.
      NB: cover with foil after 40 mins to prevent it browning too much on top.

    Orange Syrup

    1. Place sugar and juice into TM bowl and cook 2 mins / 100°C / speed 2.
    2. Use a skewer to gently poke small holes in top of cake. Pour syrup over cake and allow syrup to soak a few minutes before serving.

      Absolutely scrummy. Possibly took mine out of the oven a bit too soon but it was sooo good. I added poppyseeds to the cake and served with custard.

      Really nice and less dense than other almond meal cakes I have made...helped by the 3 eggs in recipe.. Really lovely when Cara Cara oranges are in season. Have used macadamia meal for a change...it is delicious with custard as a dessert.

      Made this cake yesterday with oranges that my friend has given me.. I have to say it was THE BEST Orange and Almond cake ever. So easy and so simple. I milled my sugar and my almonds too and it still only took minutes. Took a little longer to cook as I had in a loaf tin but it was worth waiting for ! Thank you, this one is a keeper !!

      I ONLY WANTED TO MAKE AN ORANGE ALMOND CAKE:
      Morning started off fairly benign…swam 20 lengths and a plan to complete my college assignment. Started to dry my hair but thought I’d quickly make the kids a treat and use up my recently made and in the way (in the kitchen)…drying… almond meal (from my almond milk) to make an orange almond cake. Lost my recipe so googled one and found ‘ThermoFun Flourless & Butterless Orange Cake. Keen to give it a whirl but didn’t have a ThermoMix so improvised with my Nutribullet. All going well until I thought I’d keep going after popping the first cake into the oven and make a second batch. Mix seemed awfully dry and Nutribullet starting to ‘smoke’ so decided to add a third orange to the mix. What? still dry?…..…then remembered I hadn’t added the eggs. Nutribullet groaned under the strain so had to scrape half the mix into another bowl and mix one batch at a time. Still managed to do the job amazingly well despite goo all over my husband’s desk and paperwork….i.e. tiny yatch style kitchen…no room so migrated to hubby’s desk (well mine was covered in assignments!) with the Nutribullet to do the mixing. By now, one and a half hours have passed, dog’s barking at me (for the first time ever) in frustration at not getting his morning walk, assignment not touched and my hair’s turned to candy-floss BUT my god, stop the clock….what a joy orange, flourless almond cake is now out of the oven and as we speak, melting in my mouth!!! Must try! Note to self: Write a note to Santa for a ThermoMix.

      Will try this, but can we replace the almond meal with anything? As my little boy is allergic to nuts :(

        Ann you could try oatmeal or sunflower seeds (just mill till they become flour) or just use normal flour. Please note I haven't tried any of these so they are just suggestions. I'd love to hear what you do and how it goes. :)

          Made it today with plain flour, smelled absolutely fantastic. Hubby couldn't wait for me to cut it up. But it turned out to be quite dense/heavy - is that how it is with almond meal? Still tasted great though, but thought it would be lighter.

      This is the best cake - I think I have made it 6 or 7 times now - always a winner!

      We even cooked it for residents at a retirement village lunch and it is now on their regular cafe menu - so easy and I've been able to convince our classically trained chef to have a Thermomix in his kitchen - he now thinks it will cut his work load considerable.
