This Thermomix Creme Egg Brownie was created back in very early 2014 from a recipe I had seen on the internet using creme eggs in a brownie. This recipe was part of the 2014 Member bonus with the recipe boxes I had put out.
That's where it ended up. I had forgotten about this particular recipe when putting together the 2014 book and it wasn't until a Funky mentioned Creme Eggs in the Facebook group recently that this recipe was brought out and I made it again.
Can I just say - sorry - my recipe writing skills back then were absolutely atrocious!!! I looked over the recipe and noticed I'd left out the sugar in the method - talk about feel a rush of embarrassment!! So I would like to apologise to those that have been here since the start! I have certainly come a long way! :)

Ingredients
Brownie
- 170g milk chocolate melts
- 140g caster sugar
- 110g butter, cubed softened
- 2 eggs
- 1 teaspoon vanilla bean paste
- 85g plain flour
- 2 tablespoon cocoa
- 9 mini Cadbury crème eggs (frozen)
Crème Filling
- 40g golden syrup
- 1 tablespoon butter, softened
- ¼ teaspoon vanilla bean paste
- 80g icing sugar
- 10g water
Chocolate Topping
- 100g milk chocolate melts
- 10g coconut oil
- option: a few creme eggs cut into quarters to decorate the top of the Brownie.
Instructions
- Preheat oven to 160°C. Grease and line 20cm square tin (make sure baking paper rises higher than sides to give space for toppings).
- Place chocolate in TM bowl and grate 5 sec / speed 9. Scrape down and melt
3 mins / 50°C / speed 1. - Add sugar, butter, eggs and vanilla and mix 5 sec / speed 4. Scrape down and repeat.
- Add flour and cocoa and combine 10 sec / speed 5. Scrape down and repeat.
- Pour into lined tin.
- Press frozen crème eggs into the brownie mix and with aid of spatula, smooth over mixture so each egg is covered.
- Bake for 25-30 mins. Let brownie cool completely before making the crème topping.
Method - Crème Topping
- Place golden syrup, butter and vanilla in TM bowl and mix 15 sec / speed 5. Scrape down and mix again 10 sec / speed 5.
- Set TM 1 min / speed 3 / MC off and slowly add icing sugar through hole in TM lid.
- Scrape down and add 10g water and mix 10 sec / speed 3.
- Spread over top of brownie and chill in fridge 2 hours or freezer 30 mins.
Method - Chocolate Topping
- Place chocolate and oil in TM bowl and grate 5 sec / speed 9. Scrape down and melt 3 mins / 50°C / speed 1.
- Pour melted chocolate over crème topping and leave to set.
- Optional: add additional chocolate egg pieces on top to decorate.
- Store in fridge.
