As a few of these winter days get a little warmer, I am not falling for the "winter's over!" I am prepared for that last cold snap to come rushing at me just to let me know we have had winter. This Thermomix thai chicken noodle soup will wash away all those winter blues and you'll be sitting contently.
Full of flavour and all the healing benefits of the chicken noodle soup. You will be cooking this one right up until Spring has fully set in. And even then you'll be pushing for one more serve!
Ingredients
- 1 red chilli, (optional, deseeded to decrease heat)
- 3cm galangal or ginger, chopped
- 40g TM vegetable stock concentrate
- 800g coconut milk
- 2 teaspoon Thermofun Thai Spice Blend
- 600g chicken breast/thigh fillets, cubed
- 1 lemongrass stalk, bruised
- 100g green beans, trimmed and halved
- 1 zucchini, halved and sliced
- small packet thin Rice noodles - rehydrated following packet instructions (or Slendier Konjac noodles if prefer a low carb option)
- 30g fish sauce
- 2 teaspoon brown sugar
- 30g soy sauce
- To garnish: coriander leaves
Instructions
- Place chilli and galangal/ginger into TM bowl and chop 3 sec / speed 8.
- Add stock, coconut milk and Thai Spice Blend.
- Place chicken and lemongrass into simmering basket and insert basket into TM bowl.
- Place zucchini and green beans into Varoma tray and place assembled Varoma into position on top of TM bowl. Cook 18 mins / Varoma / speed 2.
- While chicken and vegetables are cooking, prepare rice noodles (slendier konjac noodles) as per packet instructions. Place into ThermoServer to keep hot.
- Distribute the vegetables and rice noodles between 4 large soup bowls.
- Tip chicken into TM bowl (discard lemongrass). Add fish sauce, brown sugar and soy sauce and cook 5 mins / 100°C / speed 1 / Reverse.
- Pour hot soup and chicken on top of veg and noodles in bowls.
- Garnish with lots of torn coriander.
