I am always on the look out for versatile dishes and this dish has so many wonderful ways to enjoy it. These Thermomix Thai Chicken Meatballs with Rice Noodles are full of punchy flavour.
We have enjoyed these in quite a number of ways:
- As a main meal with the rice noodles.
- As a simple meatballs & sauce with a glass of wine on a late Saturday afternoon.
- We had a few guests over and had these as finger food with a couple of different sauces.
- The kids have taken the leftovers for lunches.
So as you can see this dish lends itself to a multitude of ways to enjoy. You also get to have simple, delicious food whenever you need to entertain, fill the lunch boxes or even as a main meal. Whilst I haven't done it I think the meatballs and sauce lend themselves to be cooked in the slow cooker. I can only imagine how the sauce would soak into the chicken and give you an amazing flavour combo!

Ingredients
Meatballs
- 1 slice of bread, quartered
- 1 garlic clove, peeled
- 4 spring onions, quartered
- large handful coriander leaves, stems and roots (washed well)
- 500g chicken mince
- 40g Thai red curry paste
- 1 tablespoon fish sauce
- 1 egg
- salt and pepper, to taste
Red Curry Peanut Sauce
- 10g sesame oil
- 40g Thai red curry paste
- 400ml can coconut milk
- 80g peanut butter
- 1 teaspoon ThermoFun Thai Spice Blend
- ¼ teaspoon salt
- grinds of pepper, to taste
Noodles and Vegetables
- 1 pkt Changs dried pad Thai Style Rice Noodles
- 2 carrots, sliced
- 1 large handful snow peas
- 1 red capsicum, sliced
To Serve
- peanuts, chopped
- fresh coriander leaves, chopped
Instructions
Meatballs
- Preheat oven to 180°C. Line a baking tray.
- Place bread into TM bowl and chop 4 sec / speed 6. Set aside.
- Place garlic, spring onions and coriander into TM bowl and chop 3 sec / speed 6.
- Add remaining meatball ingredients and breadcrumbs and mix 10 sec / speed 5 / Reverse.
- Roll mixture into small balls and place onto baking tray.
- Wash TM bowl.
- Bake for 30 mins.
Red Curry Peanut Sauce & Vegetables
- Place all sauce ingredients into TM bowl. Place the sliced vegetables into the Varoma and place assembled Varoma onto TM lid and cook 15 mins / Varoma / speed 2.
Noodles
- While the sauce and meatballs are cooking, prepare the noodles following instructions on the packet. Drain well.
To Serve
- Toss the sauce, vegetables and meatballs in with the noodles. Sprinkle nuts and coriander on top.

I finally got around to making these for a weekend away. OMG, they are amazing and fairly easy to put together, the sauce is also amazing. I made my GF, easily adapted for that. Thank you for an amazing recipe, this will definitely be a favourite in our house😊
