I just want to break out into mexican dance when I think about cooking this. Simple, delicious, thermomix mexican beef with salsa for dinner tonight! Tacos/burritos/jaffles it really doesn't get much easier than this for a quick dinner meal that has so many versatile uses! Baked potato filler, spaghetti (add a little cream cheese to give it a creamy mexican taste), tacos, burritos, jaffles, add some in a lasagna, make a shepherd's pie - I don't think I need to say anymore! :)
WHEN you have made this let me know what you made from the suggestions above. If you have time and space make a double batch and freeze in portions for other quick meals on those busy nights.
We really enjoy having this with a baked potato done on the BBQ along with all the taco condiments and then we usually have enough left over for a quick taco or burrito (depending what is in the cupboard) lunch the next day.

Ingredients
- 200g Thermofun Salsa
- 5 teaspoon (one batch) Thermofun Taco Seasoning
- 1 garlic clove, peeled
- 1 onion, peeled and halved
- 60g red capsicum
- 1 red chilli (optional)
- 10g olive oil
- 500g beef mince (or chicken)
- handful fresh coriander, chopped
Optional Extras
- taco shells or tortilla wraps
- avocado
- grated cheese
- diced tomato
- sour cream
- shredded lettuce
- jalapeño chillies
- baked potato
Instructions
- Prepare ThermoFun Salsa and set aside.
- Prepare ThermoFun Taco Seasoning and set aside.
- Place garlic, onion, capsicum, chilli (if using) and oil into TM bowl and chop
3 sec / speed 5. - Scrape down and sauté 5 mins / Varoma / speed 1 / MC off.
- Add 5 teaspoon taco seasoning and 200g salsa.
- Place mince into simmering basket and insert basket into TM bowl and cook
15 mins / 100°C / speed 2 / Reverse / MC off. - Break up mince with aid of spatula and pour carefully into TM bowl. Add coriander and combine well with other ingredients. Cook a further 2 mins / 100°C / speed 1 / Reverse / MC off.
- Serve with optional extras of choice.
Notes
Remaining salsa can be used as an additional topping, a yummy dip or freeze for another time.
To feed a crowd, at Method 5 increase salsa to 300g and at Method 7 add a drained can of red kidney beans.

Had this tonight in burritos and it was quick and very yummy thanks. I used dried coriander and added the kidney beans.
Quick question, there is no mention of the optional chilli in the method, do I add it with the onion & capsicum?
