    Chicken & Vegetable Cheesy Macaroni Bake - Week 46, 2016

    Well I've done it again!  I think this one beats my Mac & Cheese recipe hands down!  This thermomix chicken and vegetable cheesy macaroni bake is beyond ridiculous in the flavour and ease.  You will be making this one weekly and with the ability to "hide the veggies" from the kids, they will be looking at you like you're crazy!  ;)

    You'll note in the ingredients that this dish has my ever delicious passata in it - you're welcome :D  Another great recipe that utilises this fabulous recipe.  Although do you think I can convince Steve I need another machine just for the production line of passata?!  We eat so much of it lately, but with all that's been happening it is so great to pull some out of the freezer and grab a handful of pantry items and bam we have dinner on the table. :)

    Thermomix Chicken & Vegetable Cheesy Macaroni Bake

    Ingredients

    • 300g macaroni pasta
    • 50g parmesan cheese, cubed
    • 100g cheddar cheese, cubed
    • 2 garlic cloves, peeled
    • 1 onion, peeled and halved
    • 2 rashers shortcut bacon, quartered
    • ½ stick celery, halved
    • ½ a zucchini, quartered
    • 10g olive oil
    • 20g TM vegetable stock concentrate
    • 600g (half batch) ThermoFun Passata
    • ½ teaspoon mixed herbs, dried
    • pinch of cinnamon, ground
    • 40g red wine (optional)
    • black pepper, freshly ground
    • 500g chicken mince
    • handful fresh basil, chopped

    Instructions

    1. Cook pasta in your ThermoServer Click Here for directions.
      While pasta is cooking, continue on with recipe.
    2. Preheat oven to 180°C. Grease a very large lasagne dish.
    3. Place parmesan into TM bowl and grate 10 sec / speed 9. Set aside.
    4. Place cheddar into TM bowl and grate 10 sec / speed 9. Set aside.
    5. Place garlic, onion, bacon, celery, zucchini and oil into TM bowl and chop 3 sec / speed 5.
    6. Scrape down and sauté 5 mins / Varoma / speed 1 / Reverse / MC off.
    7. Add stock, passata, mixed herbs, cinnamon, wine and pepper.
    8. Place mince into simmering basket and lower into TM bowl on top of the sauce and cook 10 mins / Varoma / speed 1 / Reverse.
    9. With aid of TM spatula; break up mince, carefully tip mince into TM bowl and coat mince with the sauce.
    10. Cook 5 mins / Varoma / speed 1 / Reverse / MC off, placing simmering basket onto TM lid to prevent spatter.
    11. With aid of spatula, stir through basil and parmesan.
    12. Place strained pasta into lasagna dish and combine well with the chicken.
    13. Sprinkle with cheddar cheese and bake for 15 mins.

      This is really delicious like a chicken version of spaghetti bolognese. Plenty of left overs for lunches and dinner.

      I have made this twice now. Both times it didn't disappoint. It's easy to make, especially if you have the passata ready to go like I did! And so tasty. And it got the tick of approval from the hungry males in my family too. I also love that it makes such a lot. Leftovers for tomorrow night's dinner!
