You may have seen me mention in the Facebook group this week that I can't understand why all the LCHF/Keto's get to eat so much cream and cheese, but I can't eat the same amount in Chocolate! :( It got the talk again about recipes etc and many of you wanting more LCHF (Low Carb High Fat) recipes, so this week I present a beautiful creamy, cheesy meal for you all! Thermomix Cauliflower Cheese Bake!
Now I just need to find some great chocolate low carb recipes that will fit with my macros of 100% chocolate :p and you all might just convert me yet! :D
This is a great accompaniment to any meal and I love the creamy, cheesiness of it all!

Ingredients
- 1 garlic clove, peeled
- 6 bacon rashers, quartered
- 4 spring onions, quartered
- 250g cream cheese, cubed
- 250g tasty cheese, shredded, divided
- 250g mozzarella cheese, shredded, divided
- 100g cream
- pepper to taste
- 1 cauliflower, cut into florets
- 1000g boiling water from kettle
Instructions
- Place garlic, bacon and spring onions into TM bowl and chop 4 sec / speed 5. Scrape down and sauté 5 mins / Varoma / speed 1.
- Add cream cheese, 200g tasty cheese, 200g mozzarella cheese, cream and pepper and mix 20 sec / speed 4. Place cheese mixture into a bowl and set aside.
No need to wash TM bowl. - Preheat oven to 180°C.
- Pour boiling water into TM bowl and place cauliflower into Varoma trays. Place assembled Varoma into position on TM lid and steam 15 mins / Varoma / speed 2.
- Place cauliflower into a large rectangular baking dish and spread the cheese mixture over the top.
- Sprinkle the remaining tasty cheese and mozzarella on top and cover dish with foil.
- Bake for 25 mins. Remove the foil and bake for a further 5 mins to brown the cheese topping.
