    Spiced Coconut Rum - Week 35, 2017

    Some of you may remember a post in our Facebook group where I may have been tweaking some alcoholic beverages.  Here is the final result - Thermomix Spiced Coconut Rum!  I may need to check this again for consistency, because well you know quality control and all is especially essential with alcoholic drinks!   lol!  ;)

    Now read this with care - make sure you are sitting down - this is a lovely alternative to my Baileys Irish Cream recipe!  Yes you are reading correctly - ALTHOUGH it is a good one to alternate :D (on different days of course!)

    Whether it's a treat for yourself or one for gifting, you will enjoy the simplicity and affordability of such a lovely drink.  If you like it a little spicier, feel free to increase the amounts of cinnamon and nutmeg a little.  A perfect gift for Father's Day next weekend and it would also make a perfect festive drink.

    Spiced Coconut Rum – ThermoFun

    thermomix-Spiced-Coconut-Rum

    Ingredients

    • 400ml can coconut cream
    • 375ml can evaporated milk
    • 400g condensed milk
    • ½ teaspoon ThermoFun Vanilla Bean Paste
    • 1 teaspoon cinnamon, ground
    • ⅛ teaspoon nutmeg, ground
    • 250g white rum (e.g. Bacardi)
    • ice

    Instructions

    1. Pour coconut cream into TM bowl and melt 2 mins / 50°C / speed 2.
      NB: if you are making this in the colder months and your coconut cream has solidified, it is best to bring it back to liquid form by adding it to the TM bowl first and melting it.
    2. Add remaining ingredients and mix 30 sec / speed 3.
    3. Pour into bottles and store in refrigerator.
    4. Serve over ice in a glass.

    Notes

    Once stored in fridge - give it a good shake prior to serving.
