    Mad Monday - Chorizo & Onion Sauce

    It's Mad Monday again!  The first Monday of every month where I share with you a recipe that is very quick, but also is popular and a great family meal.

    I just love a quick and tasty meal that can be on the table in 20 minutes and enjoyed by the whole family!

    Our family love the spicy taste of chorizo, so this is a quick meal that features often on my monthly meal plans.

    Even better the pasta cooks in your thermoserver at the same time as the onion sauce is cooking in your thermomix bowl.  Enjoy!  :)

    ThermoFun – Mad Monday – Chorizo and Onion Sauce with Penne Recipe

    Ingredients

    • 400g penne pasta
    • 2 garlic cloves, peeled
    • generous handful fresh coriander
    • 1 onion, peeled and halved
    • 2 chorizo sausages, sliced thinly
    • 400g tomatoes, can or fresh, diced
    • 50g white wine
    • black pepper, freshly ground

    Instructions

    1. Click Here to cook pasta in ThermoServer.
      While your pasta is cooking, continue on to make your sauce..
    2. Place garlic, coriander and onion into TM bowl and chop 3 sec / speed 5. Scrape down.
    3. Add chorizo and sauté 5 mins / Varoma / speed 1 / Reverse / MC off.
    4. Add tomatoes, wine and pepper and cook 10 mins / 100°C / speed 1 / Reverse / MC off, placing simmering basket onto TM lid to prevent spatter.
    5. When pasta is cooked, drain and return pasta back into empty ThermoServer.
    6. Pour the Chorizo and Onion Sauce into server and combine well.

    Notes

    Recipe suitable for freezing.
    If not wanting to use wine, you can substitute with water, stock or verjuice.

      My daughter loves this meal. It’s her “second favourite meal ever”. She calls it “Spicy Disk Pasta”. I too make this with passata instead of diced tomatoes as my husband doesn’t like the texture of tomatoes. This is a nice quick meal that is well loved by everyone in my family, except my son, but he doesn’t like anything at the moment, so that’s certainly nothing to do with the meal!

      G'day GREAT recipe Leonie! I made this with Hot Italian Sausages (4) that were slightly frozen (as what I had on hand) cut into cubes 4 garlic, 2 red onions...made Tmx passata sauce, added red capsicum to sneak in a veggie...400 grams passata, 100 grams sav blanc...came out like a mince topping for pasta, pizza and can see this is a very versatile recipe!

      I like to have it with heated shredded lettuce and topped with melted cheese, balsamic vinegar ...is like a pizza for me without the carbs based on my food lifestyle! :)

      A definite keeper and thanks for inspiring me!

      I have a question re the pasta. We don't have any wine in the house - once before I used white wine vinegar but the flavour was WAY too strong! Is there any other substitute or did I use just too much?

        Rosie I would suggest using about 10g veg stock and 40g water instead of the 50g wine.
