    Thermomix Lamb and Mushroom Korma

    This is such a delicious Thermomix lamb and mushroom korma curry using the korma paste that our lovely Tania Lee has shared with us.

    "A rich, very fragrant Lamb and Mushroom Korma sure to impress any curry lover.  Once you have made the Korma paste it’s then a very quick and easy few steps to have this dish on the table.  I hope you and your family or guests enjoy it as much as we do.  Who’d ever need take away from your local curry house when you can whip this one up!"

    thermomix Lamb And Mushroom Korma In a bowl

    Ingredients

    Lamb & Mushroom

    • 20g olive oil
    • 1 large onion, peeled and halved
    • 650-700g lamb, cut into large cubes (eg lamb rump)
    • 250g (approx half batch) ThermoFun Korma Paste
    • 20g TM vegetable stock concentrate
    • 400g coconut cream
    • 250g button mushrooms, halved if large
    • 100g baby spinach

    Instructions

    1. Place oil and onion into TM bowl and chop 3 sec / speed 5. Scrape down and sauté 5 mins / Varoma / speed 1 / MC off.
    2. Add lamb and 250g korma paste and cook 5 mins / Varoma / speed 1 / Reverse / MC off.
    3. Add stock and coconut cream and cook 20 mins / 90ºC / speed 1 / Reverse / MC off.
    4. Add mushrooms and continue cooking 10 mins / 90ºC / speed 1 / Reverse / MC off*.
    5. Add baby spinach and with aid of spatula stir through the curry to wilt.
    6. Serve with rice.

    Notes

    Paste can be kept refrigerated in a clean glass jar for up to 1 week. If using half the batch for a recipe, the remaining half can be frozen for use another time.

      You have excelled once again, Leonie! Hubby dislikes mushrooms and coconut however they went down a treat in this dish. I added string beans together with the mushrooms. The Korma paste is to die for and so quick and easy although I must admit that several more chillies were added to the recipe as we like super spicy food. Another recipe added to our list of favourites!
