School lunches - what a drag! I used to hate having to pack the kids lunches. Although it was more the worry about what was coming home uneaten that got me! These Thermomix Fruit N Nut Muesli Bar or balls are the perfect lunchbox addition or after school snack if your child's school is nut free.
Best part about these make a double batch! Make bars with one batch and balls with the other. That way they kids think they are getting something different each time. Also great for that 3.30 itis at work! Pop a ball or two in your lunchbox and voila something to get you through the afternoon. :)


Ingredients
- 55g rolled oats
- 55g macadamia nuts or cashews, roughly crushed
- 40g pumpkin seeds
- 25g sunflower seeds
- 25g desiccated coconut
- 15g chia seeds
- 150g dried apricots
- 100g raisins or sultanas
- 25g orange juice
- Note: replace nuts with extra seeds if required for nut allergies
Instructions
Method for Muesli Bars
- Place nuts and oats into TM bowl and dry roast 8 mins / 100°C / speed 1.
- Add coconut, pumpkin, sunflower and chia seeds and mill 1 sec / speed 4. Set aside.
No need to wash TM bowl. - Place apricots, raisins/sultanas and orange juice into TM bowl and puree 10 sec / speed 10.
- Add set aside nuts etc and mix 10 sec / speed 4 / Reverse.
- Spread into a square tin lined with baking paper.
- Place into fridge and chill for at least 1 hour.
- Slice into bars. Wrap individually in baking paper to prevent sticking.
Method for Snack Balls
- After Step 4 - roll into small balls and coat in coconut. Place into fridge.
