
This makes a lovely sauce for use in either desserts or a base for a sweet/savoury sauce for on top of meats such as roast duck, pork or turkey.
Some other examples where it can be used are; with pancakes, stirred through yoghurt, ice cream, rice pudding or other puddings, over a cheesecake, or layer between a chocolate cake.
Ingredients
- 500g frozen cherries, divided
- 220g sugar
- 120g water
- 30g fresh lemon juice
- 1 pinch of salt
- ¼ cup water
- 2 teaspoon corn flour
Optional Ingredients for Savoury Sauce to serve with meat
- 1 tablespoon balsamic vinegar
- 1 tablespoon marmalade
- 1 teaspoon thyme, fresh or dried
- pepper to taste
Instructions
- Place 400g of the cherries, sugar, water, lemon juice and salt (and optional savoury ingredients) in TM bowl and cook 8 mins / Varoma / speed 1 / Reverse / MC off, placing simmering basket on top of TM lid to prevent spatter.
- In a small dish, blend water and cornflour and add to TM bowl and cook a further 10 mins / Varoma / speed 2 / Reverse / MC off, placing simmering basket on top of TM lid to prevent spatter.
- This sauce thickens on cooling. To test consistency, use a cold saucer, spoon a teaspoon of sauce and run your finger through. If longer cooking required, cook in increments of 5 mins until you're satisfied.
NB: make sauce slightly thicker than you like, as when adding remaining cherries it does thin down slightly. - Add remaining 100g cherries and cook 5 mins / Varoma / speed 1 / Reverse / MC off, placing simmering basket on top of TM lid to prevent spatter.
Notes
This recipe is NOT to be doubled.
Stay close to your Thermomix if using fresh cherries as it can get messy!
Sterilise jars using preferred method.

Cherry sauce is delicious! Gave it 5 mins extra and used Balsamic vinegar which is still good for use in sweets.
