    Lemon Chicken - Week 34, 2015

    Thermomix Lemon Chicken - ThermoFun

    Many of you would know that before I bought my Thermomix I seriously could not cook.  I was a packet and jar cook!  My family were lucky to get dinner made from a jar of “Chicken Tonight” – it was a good thing that these jars came in various flavours so I could at least give the family some variety!  My young daughter's most favourite meal for years and years was Lemon Chicken Tonight.  For ages I wanted to try and replicate it but looking at all the ingredients and numbers on the jar I had no idea really where to start.

    It wasn’t until I published my lemon curd recipe that a ThermoFun member came up with the idea that the lemon curd could be used for a lemon chicken recipe.  So with many tweaks and testings between Amy and myself we finally came up with what we think is a very good replication of the commercial jar.

    Even my (now 18 year old) lemon chicken loving daughter gave it her stamp of approval!

    Week 34, 2015 - Lemon Chicken - ThermoFun

    Ingredients

    • 10g raw sugar
    • 3 eggs
    • 40g lemon juice
    • 50g butter, unsalted, cubed
    • 1 onion, peeled and halved
    • 10g olive oil
    • 1 teaspoon cumin, ground
    • 90g water
    • 50g white wine
    • 30g TM vegetable stock concentrate
    • 600g chicken thigh fillets, cubed
    • salt and pepper, to taste
    • 400g basmati rice
    • 1500g boiling water from kettle
    • mixed vegetables, bite size pieces

    Instructions

    1. Place sugar, eggs, lemon juice and butter into TM bowl and mix 5 sec / speed 10.
    2. Cook 10 mins / 80°C / speed 2. Set aside.
      No need to wash bowl.
    3. Place onion, oil and cumin into TM bowl and chop 3 sec / speed 5.
    4. Scrape down and sauté 5 mins / Varoma / speed 1 / MC off.
    5. Add lemon mixture, 90g water, wine and stock and mix 5 sec / speed 5.
    6. Scrape down and cook 1 min / 100°C / speed 1 / MC off.
    7. Add chicken, salt and pepper and cook 18 mins / 100°C / speed 1 / Reverse.
    8. Place lemon chicken into pre-warmed ThermoServer.
    9. Weigh rice in simmering basket on top of TM lid. Wash rice under cold tap.
    10. Pour boiling water into TM bowl. Place rice into simmering basket and rinse under cold tap until water runs clear. Carefully insert basket into TM bowl and cook 8 mins / Varoma / speed 4.
    11. While rice is cooking, add mixed vegetables onto Varoma tray (ensuring not all steam holes are covered).
    12. When the 8 mins has finished, place assembled Varoma onto TM lid and steam rice and vegetables 8 mins / Varoma / speed 2.
    13. To serve, toss vegetables with the lemon chicken and serve with rice.

      I had some lemon curd in the fridge that really needed to be used up, and when I saw this recipe I thought what a great way to use it. So I asked my son to make this recipe for the funkies Nov challenge. So easy when half the recipe was already made LOL!
