While basil is still growing beautifully at present, make sure you make this chicken pesto roulade. I love pesto and it always goes fabulously with chicken. If you find your chicken too hard/tricky to roll – just cut in half and place cream cheese and basil in the middle like a sandwich.

Ingredients
- 25g parmesan cheese, cubed
- 1 garlic clove, peeled
- 80g cashews
- 20g basil leaves (this is a BIG bunch)
- 80g sundried tomatoes
- 150g cream cheese
- 4 small-med chicken breasts
- 1 small bag baby spinach leaves
- 1000g boiling water from kettle
- 450g potato, diced
- green vegetables eg broccoli, beans, zucchini
- small amount of milk and butter for mashing potatoes
- salt & pepper
Instructions
- Place parmesan into TM bowl and grate 10 sec / speed 9.
- Add garlic, cashews, basil and sundried tomatoes and chop 3 sec / speed 7.
- Add cream cheese and combine 10 sec / speed 5 / Reverse.
- Butterfly open each chicken breast and divide the pesto and cheese spread evenly onto the chicken breasts.

- Place on top of the cheese spread, some spinach leaves.
- Tightly roll the chicken breast and its fillings and then roll securely with baking paper ensuring sides are tucked in and securely tied up if necessary.
- Place each parcel into the Varoma.
- Pour boiling water into TM bowl. Place assembled Varoma on top of TM lid and cook 30 mins / Varoma / speed 2.
- Carefully remove the Varoma and add the simmering basket with the potatoes into TM bowl. Place Varoma back into place and add choice of green veg to the Varoma and cook 15 mins / Varoma / speed 2.
- Pre-warm ThermoServer and allow the chicken to rest in the ThermoServer for 10 mins before opening the parcels. Place the Varoma with green vegetables on top of the ThermoServer to keep vegetables warm.
- While the chicken is resting, lift the simmering basket of potatoes out of the bowl and strain the water.
- Discard the water from the bowl (no need to wash bowl) and add potatoes, milk, butter, salt and pepper to mash 10 sec / speed 8.
- Carefully remove each chicken roulade from the baking paper and place straight onto serving plate.
- Pour over any creamy pesto sauce that may be in baking paper. Serve with mashed potatoes and steamed vegetables.

Very tasty, I used dried basil instead.
i think you could easily modify ingredients to suit your taste/diet, but this was perfect!
Great if you have guests as you can prepare in advance and just cook as required!

Tried this last night. The kids really enjoyed it. While I liked it, I would use less cream cheese next time. Best bit for me was how it taught me to steam and mash at the same time.
