I can hear what you are saying! Why are you giving me a healthy Thermomix Zucchini salad when it’s nearly Easter and I want a chocolate recipe !
I won't say that I've eaten my quota of chocolate since Steve started chemo but well - it's been quite a lot! I had a friend ring today, told her I was just finishing up the shopping and she had the nerve to ask me if I had got stuck in the chocolate aisle because I couldn't decide what Easter Chocolate to buy! So I told her I got one of everything! ;) THEN she said, that's right, they had a pre packaged pallet waiting for you! The nerve! ;) So I told her, no I couldn't fit it all in the car, her response - what you have a station wagon it would have fit! lol!
So just to prove her wrong! I have added a healthy choice to the menu this week! Thermomix zucchini salad with couscous and chorizo but you MAY see a new chocolate recipe later this week!!! :)
This salad is beautiful! Creamy, crunchy, spicy and just plain delicious! It's even better the next day too, as it's had time for the flavours to develop even more.
Matches up nicely with some shredded chicken for lunches. Even though this salad does make a lot, if you want to have it go further a nice grilled chicken, steak or lamb alongside is just what the doctor ordered! Or just on its own is just as nice!
I haven't tried it but, it has been suggested by one of my testers: brown rice, or quinoa is also a great substitute for the couscous.
Whether it's over the Easter weekend or just as a mid week meal/side dish, this Thermomix couscous, chorizo and zucchini salad is great to have on the menu planner. Perfect for entertaining over Easter - a sure winner!
Adapted from Delicious recipe

Ingredients
- 2 garlic cloves, peeled
- 1 red chilli, deseeded
- 10g olive oil
- 2 chorizo, sliced
- 50g peas, frozen
- 1 teaspoon paprika
- 1 teaspoon cumin, ground
- 250g pearl couscous
- 600g boiling water from kettle
- 200g cherry tomatoes, halved
- 1 red onion, sliced thinly
- 1 large zucchini, trimmed, diced
- 1 cup flat-leaf parsley leaves
- 250g tub Persian feta (plus the oil from the tub)
- 2 tablespoon lemon juice
- salt and pepper, to taste
Instructions
- Place garlic, chilli and oil into TM bowl and chop 3 sec / speed 8. Scrape down.
- Add chorizo, peas, paprika and cumin and cook 5 mins / Varoma / speed 1 / Reverse. Set aside.
No need to wash TM bowl. - Pour boiling water and couscous into TM bowl and cook 8 mins / 90°C / speed 1 / Reverse.
- When couscous is cooked (texture is typically al dente) tip into simmering basket and run the couscous under cold water to cool it quickly. Allow to drain well.
- Transfer couscous to a large bowl.
- Stir in tomato, onion, zucchini, parsley and chorizo.
- Pour oil from feta into salad bowl, add lemon juice, salt and pepper and combine well.
- Top with crumbled feta and serve.
