This week I bring you the value buster! The one meal two ways! This thermomix chorizo cheese burger pastry is the meal that just keeps on giving! As a burger with salad and bacon jam or tomato chutney – DELICIOUS! As a pastry “pie” double delicious!!!
The patty itself is a little addictive and I may have “snacked” on one while waiting for everyone to get home! Well quality control is imperative for food bloggers! 😉
This recipe is quite adaptable to spice variations as well! I can’t wait to try it with my cajun spice mix next!
You know I just had a thought! If you do these as the pastry “pie” why not add a dollop of;
in between the patty and cheese for an extra flavour bomb! 🙂

Janet, one of my testers for this recipe used filo pastry which she said was delicious!
Ingredients
- 3 sheets butter puff pastry
- 1 slice of bread, quartered
- 2 chorizo, quartered
- 2 garlic cloves, peeled
- 1 onion, halved and peeled
- 500g beef or chicken mince
- 2 tablespoon ThermoFun Taco Seasoning
- 1 egg
- 100g pine nuts (optional)
- 6 square slices of tasty cheese, quartered
Instructions
- Make ThermoFun Taco Seasoning and set aside.
- Place bread into TM bowl and chop 4 sec / speed 6. Set aside.
- Place chorizo, garlic and onion into TM bowl and chop 5 sec / speed 6.
- Add mince, breadcrumbs, 2 tablespoon taco seasoning, egg and pine nuts (if using) and mix 10 sec / speed 4 / Reverse. Scrape down and repeat.
- Take puff pastry out of freezer to defrost a little.
- Divide the mixture into 12 small patties approx. 7cm in diameter and pan fry for 2 mins each side.
NB: they will continue cooking in the oven. Allow to drain on paper towel and cool a little. - Preheat oven to 180°C. Line a baking tray with baking paper.
- Cut each pastry sheet into four squares. Carefully peel off a square and gently stretch it each way to make the square slightly larger.
- Place a burger pattie into the middle of each pastry square, topping with 2 pieces of cheese. Lift up the corners and sides of the pastry and gently turn them closed encasing the burgers and creating a parcel.
- Place them on baking tray and bake for 20-22 mins until pastry is golden brown.
- Serving suggestion: serve with avocado, tomato, cucumber and coriander chopped salad and ThermoFun Tomato Chutney.
Notes
Filo pastry can be substituted.
