You know me - if it's chocolate I am in! There really isn't too many chocolate things I don't like and this thermomix chocolate berry chia pudding is something I really enjoy. It really is a great little midnight snack :) or if you are after something light and refreshing after dinner. These would also be great for 3.30itis and I am sure the kids will think it's their birthday when you "let them" eat this! :)
This is a lovely low carb, grain free, indulgent tasting chocolate treat layered with a mixed berry chia jam. For those following LCHF, be sure to use a 70% or higher dark chocolate.

Ingredients
- Mixed Berry Chia Jam
- 50g dark chocolate melts
- 400g coconut milk
- ½ tablespoon cacao powder
- ½ teaspoon ThermoFun Vanilla Bean Paste
- 40g chia seeds
- optional: pinch cinnamon or cardamom, ground
Instructions
- Place chocolate into TM bowl and grate 5 sec / speed 9. Set aside.
- Make Mixed Berry Chia Jam and refrigerate.
- Place coconut milk, grated chocolate, cacao, vanilla, chia seeds and optional spice if desired and cook 4 mins / 50°C / speed 2.
- Place a tablespoon Mixed Berry Chia Jam into base of each dessert glass/bowl.
- Pour Chocolate Chia Pudding equally between glasses and refrigerate to thicken a min 2 hours.
- Serve with an extra dollop of Mixed Berry Chia Jam on top.
