It's late at night and you just feel like something that's oooey and gooey! Well all the hard work has been done (the things I do for you :D ) with this thermomix butterscotch self-saucing pudding. :)
This is the easiest and most scrumptious dessert which looks very impressive too! It actually reminds me of a sticky date pudding in some ways too!

Recipe Inspired by Taste
Ingredients
- 100g butter, cubed
- 500ml boiling water from kettle
- 1 tablespoon cornflour
- ¾ cup brown sugar, divided (½ cup + 30g)
- 6 tablespoon golden syrup, divided (2 tablespoon + 4 Tbsp)
- 125g milk
- 1 egg
- 190g self raising flour
To serve: vanilla ice cream, cream or custard
Instructions
- Preheat oven to 180°C. Grease a square ceramic or glass Pyrex style baking dish. Boil water in kettle.
- Place butter into TM bowl and melt 5 mins / 50°C / speed 2.
- Whilst butter is melting, in a small bowl combine cornflour and ½ cup brown sugar and set aside.
- In a small jug, combine 500ml boiling water with 2 tablespoon golden syrup and set aside.
- When butter has melted, add milk, egg and 4 tablespoon golden syrup and mix 5 sec / speed 4.
- Add self raising flour and 30g brown sugar and mix 15 sec / speed 4.
- Pour the pudding batter evenly into the oven proof dish.
- Sprinkle the cornflour and brown sugar mix over the pudding batter.
- Carefully pour the boiled water and golden syrup mix on top.
- Bake 40 mins or until a skewer comes out clean.
- Allow to rest for 5-10 mins prior to serving.
- Serve hot with vanilla ice cream, double cream or custard…or all three!
Notes
Variation:
Place sliced banana on the bottom of the dish and add a sprinkle of coconut in the batter.
