Made this yesterday to take to picnic barbecue. Served just warm & was very popular .

Thank you Caroline, great to hear! :)
Marla says
My zucchini-hating son willingly ate two servings!
thermofun says
Great Marla! You should try my zucchini cake on your son! People don't even know it has zucchini in it - so don't tell him!! :)

This is my go to flavoursome quick and easy slice. It’s versatile too. I sometime leave the carrots out and use extra zucchini. I also substitute yoghurt for the sour cream. I do add about a tablespoon of flour to keep it firm. I like to put fresh crumb of bread on top too. Blitz a few slice of bread before making the recipe and put aside then sprinkle on top before baking.
thermofun says
Thank you Sue. Fabulous to know it works well with yoghurt. I love the breadcrumb idea too! :)
Alysia says
It was great, the left overs went into the freezer.
thermofun says
Awesome Alysia! :)

I have this in the oven as we speak, looking forward to trying it.
I am dairy free so have used:
1) Tofutti Brand Sour Supreme https://www.tofutti.com/dairy-free-cheeses/sour-cream/better-than-sour-cream/
2) Primal Kitchen Mozzarella Style Shreds https://www.primalkitchen.com.au/our-dairy-free-cheese/
It wont have that amazing brown melted cheese look but if the smell is anything to go by its going to be wonderful!
I may have also grated the zucchini first and put it aside to 'drain' after reading the above comments as I didn't have to grate cheese as my version was already grated.

Thank you Alysia. Looking forward to hearing how it went.

This is so yummy & quick to make.

Maria says
This is amazing ! Loved the recipe for not having any flour in it and can honestly say it's the first zucchini slice I have made that has turned out perfectly ! Thank you ?
thermofun says
It is so nice without the flour Maria and thanks for the comment :D

This is great. I added 2 tablespoons fresh breadcrumbs and it was nice and light. I used fresh cream soured with 1/2 teaspoon white vinegar instead of the sour cream and it was fine. Tastes wonderful and I am lucky enough to have a slice for lunch today (you have to be quick in our house with midnight snackers around) ....
thermofun says
Sounds like you were lucky Merryn. Thanks for sharing :D
Jean Misko says
We loved this. I used natural yoghurt as I didn't have sour cream. A lovely recipe, thanks.
thermofun says
That's an awesome tweak Jean. I will give that a try next time.
Lucinda says
Made it for lunch today and it was very nice. Even vegie avoiding hubby ate a decent serve!
thermofun says
Great to hear Lucinda and always a winner when everyone digs in!
Jessica Nay says
Tastes great! But it was very wet, there was a heap of water in the bottom of the dish once I had cooled it and taken out of oven. Did anyone else find this? Is it from the zucchini?
thermofun says
Hi Jessica - I'd say it definitely was from the zucchini - sadly some can be a lot more watery than others. I do find it absorbs the liquid if taken out of the oven and dish sits on the bench for at least 10-15 mins prior to slicing it.
Moragajagga says
This sounds delicious and would be great made in mini-loaf sizes for school lunches. Do you know if they defrost well - will they go soggy? What would be the best way to freeze?
thermofun says
I have frozen leftovers for my hubby to take to work in plastic containers. Hubby said it freezes good enough for his lunches, but my 19 year old DD disagrees! lol It may be a case of trial and error for you. Let me know how it goes.
Lisa says
How delicious! Thank you!
I made it for school lunches, but my husband and kids ate it all. Even after them asking what it was and saying "yuk, we hate zucchini".
thermofun says
Thanks Lisa - lol that's funny re kids and hubby! I'm pleased you all enjoyed it. :)
