Now I know most of you won’t believe me when I say that I enjoy a healthy smoothie! So every now and again I have to remind you! 🙂 This thermomix blueberry coconut smoothie is just so refreshing and so very very filling.
We do enjoy a smoothie every now and again on a Sunday morning when we just can’t be bothered with a hot breakfast. This on the other hand would be awesome for those after school cries “I’m hungry!”
Smoothies were always my ‘go to’ when my kids were younger – I couldn’t cook remember! 🙂 Now Diana has them almost daily! She would literally live on smoothies when it was exam cram time, which I didn’t mind because I knew they were good fats and good brain power for her! 🙂
To make paleo leave out the yoghurt.
To make LCHF - substitute the maple syrup for your choice of sweetener
- 40g raw almonds
- 100g coconut milk (not cream)
- 100g natural yoghurt
- 150g frozen blueberries
- 20g maple syrup (leave out if preferring a low carb option)
- 120g ice
- 80g water
- Place almonds into TM bowl and mill 15 sec / speed 9.
- Scrape down and mill a further 10 sec / speed 9.
- Add remaining ingredients and blend 1 min / speed 9.
