Were you one of the very lucky people to get that fabulous bargain Parmigiano Regiano (parmesan) cheese at Woolworths a few weeks ago for $3? I heard some were very lucky to find it for 50 cents! Woolworths were marking them down as the cheese was close to it’s expiry date.
Since then I’ve had quite a few people ask me for ideas on what they can do with it all.
I have grated all of mine and frozen it. If you are going to grate yours don’t forget to cube your cheese 3-4cms before grating. 150g maximum in the TM bowl 10 sec / speed 9.
Don’t dispose of the rind as it has many uses!
The rinds are full of umami and will add extra flavour and richness to a variety of dishes. The rinds freeze perfectly well and can be thrown into whatever you are cooking straight from the freezer!
Here are some ideas for you to place a piece of rind in while you are cooking, as it imparts a lovely flavour. Remove and discard the rind when you have finished cooking.
- Minestrone or a red bean curry
- Place rind in the water for cooking pasta, gnocchi, rice or risotto
- Place the rinds in a jar with some peeled garlic cloves. Fill jar with olive oil and make Parmesan-infused olive oil. Great for dipping bread into too!
- Rind soaked in Grape Seed oil makes a yummy dressing or mayonnaise (not olive oil) for a Caesar salad
- If the rind is pure cheese (with no waxy coating), you can grill the rind until it becomes soft and chewy, put it on a piece of crusty bread and eat.

NB: Sometimes the cheese rind may dissolve into whatever you are cooking, but if it doesn’t, just remove it with a spoon before serving. It will add a beautiful umami complexity to your dish.
